Roots to Sky
A four-scene culinary performance exploring the dialogue between food, space, and sound
- from grounded roots to celestial reflections.
Created in collaboration with Inspired Gathering, Roots to Sky was a multi-sensory dinner where architecture and food performed in tandem. Conceived as a spatial sequence rather than a traditional meal, each course unfolded as a scene, guiding guests through four distinct environments that mirrored the emotional and physical arc of the menu. Moving from grounded to open, tactile to reflective.
Scene I, Course I
The opening was standing, tactile, and minimal. Food was served by hand around heavy stones: cool, raw, foundational. Guests were invited to forage around the stones to try the different bites. All featuring root vegetables in every form - roasted, braised, pickled, pureed, caramelized, raw. A grounded, tactile beginning to a journey from root to sky.
Scene II, Course II
Guests moved to the floor amid soft light, scattered plants, and painted paravents, where they discovered miniature edible gardens served on art and architecture books. The space felt low and lush, evoking a secret garden suspended between stillness and awakening.
Scene III, Course III
For the third course, the table became sky. A narrow mirrored surface stretched through the space, reflecting a canopy of lights above. Guests dined on a constellation of mushroom, white asparagus, and carrot with wild rice, sage, and spirulina yogurt — a dish that mirrored the colors of the cosmos: 🔴 Red for gravity & pulse - the grounding force.
🔵 Blue for sky & stillness - the infinite above.
⚪ White for starlight & clarity - the space between.
🟡 Yellow for fire & sun - the energy that connects it all.
It was the most structured moment of the evening, but also the most surreal.
