Edible Echoes
An edible installation at SAA Brooklyn inspired by New York’s mirrored skyline
For its inaugural event in New York, Vitamin Color created Edible Echoes - an immersive culinary installation exploring reflection, architecture, and abundance.
Inspired by the city’s skyline, where modern glass towers mirror historic façades, the installation translated this phenomenon into an edible landscape. A series of mirrored blocks of varying shapes and heights interacted with vibrant vegetable compositions, creating a dialogue between color, texture, and perspective.
Just as the city’s buildings reflect one another, the vegetables - representing Vitamin Color’s world - were mirrored across these surfaces, forming a kaleidoscopic interplay that echoed New York’s constant movement and multiplicity.
Alongside the installation, a series of five paintings extended the concept into another medium — abstract interpretations of the city’s reflections, inspired by spring light and daily bike rides through New York. Together, the edible and visual works formed a love letter to the city, blending food, form, and emotion.
Exhibited at SAA Brooklyn, Edible Echoes embodied Vitamin Color’s commitment to culinary excellence, vibrant elegance, and artistic presentation, inviting guests to experience food as architecture, reflection, and rhythm.
